The Best Avocado Egg Salad

43 reviews / 4.8 average

The fact that I am even eating any variation of an Egg Salad right now is a sign that these are strange and alarming times. I don’t know what’s gotten into me – I get a craving for Egg Salad approximately once every five to eight years, so even without the newish addition of avocado, this was already kind of a big deal.

But then I went and used mashed avocado for the base instead of mayo.

Not because I don’t love mayo – I actually do love mayo and I can handle the judgement. More because I felt a little peer pressure from Instagram and some of my favorite blogs who have gone before me with this recipe. The avocado-egg power combo seems to be on every crevice of the internet. Poached egg and avocado toast – absolutely. I’m there, all day every day. But avocado egg salad? That’s going to require more of a jump from me. I needed to think about it for a few years first.

How To Make Our Avocado Egg Salad:

Avocado Egg Salad on a bagel.

Today I stand here to tell you that I’ve taken that jump – I’ve leveled up my avocado-egg-power-combo game to include Avocado Egg Salad – and my oh my. IT DOES NOT DISAPPOINT. It silky-smooth, creamy-dreamy delicious.

I need (NEED) zip in all the foods in my life, so I went wayyy heavy on the lemon juice, and I also got a little aggressive with the dill addition because dill tastes like the best parts of summer to me. Both very solid decisions. #humblebrag

All in all, I ended up with an egg salad situation that is very next level. Very not-egg-salady, for those of you who are like me and think you don’t like egg salad.

Let’s briefly analyze the everything bagel situation, if we may.

An everything bagel is quite possibly one of the most best-tasting, under-acknowledged, beautiful food creations of my lifetime. The thing about everything bagels is that you forget they exist. No one has everything bagels on their regular grocery list. But everyone loves everything bagels. They go with everything. They ARE everything.

In this case, the combo of salty, crunchy, oniony bagel with the mild and creamy avocado egg salad has built the foundation of my summer lunches. It is beyond good, and it’s basically health on a bun because eggs and avocado.

My goal for this summer is to make really good recipes. That sounds obvious, and it is. But in my mind, I’m viewing these summer recipes as recipes I’d feel super, super solid recommending to you as weekly warm-weather meal staples.

This is one of those recipes. ❤

Avocado, eggs, dill if you want (YOU DO WANT), lemon juice, salt… and an Everything Bagel. The world is your oyster.

The Best Avocado Egg Salad

  • Author: Lindsay
  • Total Time: 20 minutes
  • Yield: 5 (heaping 1/2 cup each) 1x

Description

Avocado Egg Salad – no mayo here! just avocados, eggs, herbs, lemon juice, and salt. Especially good on an everything bagel. Just saying.

Ingredients

Scale
  • 2 avocados
  • 8 eggs
  • a handful of dill
  • a handful of parsley
  • juice of one lemon
  • a pinch of salt
  • a drizzle of olive oil (as needed)

Instructions

  1. Hard boil the eggs. Cover the eggs with water in a saucepan. Bring to a boil, turn heat off, cover and rest (on hot burner) for 8-10 minutes. Run under cold water and break off the shells. Cut the eggs into small pieces.
  2. Mash the avocados. Mash the avocados in a bowl with the back of a large wooden spoon until mostly smooth.
  3. Mix and serve. Mix the eggs with the avocados, herbs, lemon juice, salt, and olive oil if you need it. Serve immediately at room temperature, or chill and serve cold.

Notes

I LOVE LOVE LOVE this avocado egg salad on an everything bagel. It’s just dreamy.

Taste and adjust as you go – I like mine with a little more of a bite so I go heavy on the lemon juice and dill.

i’m totally with you on the egg salad thing, but with avocado & TONS of lemon, i think i can hop on board!! love the addition of an everything bagel – i wonder if the whole “everything” part doesn’t actually refer to the spices, but the fact that they make everything they touch better?! =) just a thought…

I too have seen avocado egg salad recipes all over the internet, and I’m not sure if I’m ready to try it yet! I love how you use everything bagels with this, I love everything bagels. Thanks for sharing! 🙂

This is one of those must try recipes of summer for me! I’m like you in only eating egg salad every few years, but I’ve been wanting it lately and I’m one of those few who do put everything bagels on their list quite often. I can’t wait!

LOVE this recipe! Just curious, how long would you say this keeps, chilled in the fridge, before going brown? Could I make it on a Sunday and have lunch for Monday and Tuesday, or is it really a day-off type situation?

Gosh, honestly, mine was gone so fast (within 24 hours – we have a whole team to help me eat through this stuff 🙂 ) that it’s hard to say. I would guess 1-2 days – I don’t love the idea of the egg and avocado sitting together for longer than that.

If you put saran wrap on top of the avacado egg salad then it won’t turn brown for 2 days. put it in a container and put saran wrap directly on top (make sure all air is out) then put the top on.

Love this. I make a variation of this but do less lemon and throw in some Dijon. I’ve never thought to not add mustard, but I’ll have to try this to see how it compares!

Guacamole would work in this salad! However, you may want to eliminate or reduce the amount of herbs and lemon juice!

Is that a St Paul Bagelry everything bagel?! I’m obsessed and get them probably every other grocery store trip! This looks so great, I need to try it this week!

So my take on this is…not only the COOLEST avo-egg salad I’ve seen yet… if you are health bragging on the avo & egg, (and you totally should!) then brag about the fabulous liver cleaning benefits of the parsley as well!

PLUS, I mean, as a casual observer who has done no empirical research on the topic, these simply the most GORGEOUS pics of this given sandwich I’ve seen yet! You go!

I look forward to all the summery goodness you send our way for the next three months. Thanks!

Very tasty! Added some slightly mashed garbanzo beans.
Our neighbor makes a variation of this (he’s from el salvador): hard cooked eggs, avocado, red onion, lime juice, salt/pepper, and some cilantro if he has it. Serve with tortilla chips. I’m pretty sure he and his family were making this egg/avocado combo for many years prior to it becoming a “thing” on the internet.

This looks delicious! And I will be trying it out ASAP and sharing the recipe with my mom! I know she’ll love it!

One thing though, what brand of everything bagel did you use? I am always on the hunt for a good one but I feel like the ones I find at grocery stores don’t have nearly enough of the “everything” seasonings – and the one you have pictured looks perfect!

Your zip comment really stood out to me because I’m always like “it needs an acid!!” to 95% of the food I make. Vinegar and citrus juice all day erry day. Also I just learned a neat method for peeling hard boiled eggs, by putting them in a jar with a bit of water and shaking it. It took a bit of practice to get the amt of water and shaking amount perfect (don’t want to go too hard with it) but it’s soooo easy.

LOVING this idea. I’m meh on egg salad (and potato salad and pasta salad), but this variation looks straight-up perfect! Esp with that bagel… bagel sandwiches never fail

  12. Pinch of Yum Logo

Yum! I’ve made avocado potato salad before – pretty much the same idea, replace mayo with an avocado + lemon + dill sauce. But I had never thought to try it with egg salad! And the addition of the everything bagel…genius!

  13. Pinch of Yum Logo

Made as directed – but with CILANTRO instead of dill 🙂 SO good/fresh/filling. Definitely recommend as an easy summer meal option 🙂

  14. Pinch of Yum Logo

This was so delicious! I used fresh tarragon and parsley from my garden (some animal ate the dill) and served it on toasted Italian bread. I also subbed a lime since I was out of lemons. Definitely making this again. 👍👍. Thanks so much for this recipe!!

I am a big fan of egg salad, but not of avocado. But if I could have this bagel, I am all in! Breaking out my Instant Pot for perfect boiled eggs and looking for a ripe avocado and some dill.

Thanks for sharing, this is so good I usually eat avocado on the side /W/ egg salad. It’s very good mixed in /W/ eggs.
